I can't wait...its 2008!

Let me tell you...yesterday held a momentous occasion for me. After 1 1/2 years (6 months of hard work...7 months of freaking out...and 5 months of working hard again), I finished my packet for becoming a certified Lactation Educator. Right on time for what I promised my bosses, and whew! I'm so glad its done. I consider myself a Lactation Educator already, but once they grade it and as long as I pass, I'll be certified, so that is a great relief! Thanks to all of you who prayed for me during this time.
Last night was nice. Instead of feeling sad that we didn't have plans, I was glad. I just wanted to be home with my man. Roger bought a word search game you can play head-to-head, so we played for a while. We rented The HitchHiker's Guide to the Galaxy and enjoyed it...then toasted with some Martinelli's after midnight came.
This morning we went to the Original Pancake House for Breakfast, and I got a Dutch Baby. It was so yummy....takes me back to when Mom used to make those for me. It take a little longer to make, but I highly reccommend it. They serve it with lemon wedges, powdered sugar, and butter. I tried those. The sugar wasn't bad, but I'm glad I asked for some jam. That's how I like mine. Roger had some of mine with syrup, which is also good.
Now that I'm done with my CLE packet, I am looking forward to reading the book I got for Christmas. And taking down Christmas decorations, and getting our home back in order.

I am a bit ashamed to say that i don't know what a "Dutch Baby" is, other than an infant in Amsterdam. And i certainly hope THEY'RE not served with lemon wedges, powdered sugar, and butter...

Those look a lot like something I used to make most mornings when we were first married! They're really easy to make!
6 eggs
1 cup flour
1 cup milk
1 cube margarine, melted
Mix and beat well, eggs, flour, and milk. Melt 1 cube margarine on cookie sheet or dripper pan. Pour mix into pan. Bake at 450 until lightly browned and bubbly, about 15 minutes. Serve with syrup or jam.
I used to have these cute corning ware individual baking cups that I made them in. It was a lot of fun.
I'm a friend of Cindy(Mind Full of Bedlam). I just wanted to say congrats on the CLE completion. I'm a breastfeeding mom myself and have a great appreciation for your line of work. I know so many women need help from people like you in order to stick it out with breatfeeding. I'm lucky to have great support from my mom, and doula.
